Grass-finished is better. Waiting for it is not. Supermarket beef, eggs and butter already beat the standard plate.

Good enough meat beats the perfect diet you never start

Grass-finished is a real upgrade. It is not the entry ticket.

Most people stall on the label. They want the farm, the breed, the finishing story, and they stay on the plate that made them tired. That is backwards. The first win is leaving the ultra-processed mix. The second win is the better animal.

Not medical advice. A comment on what actually changes the plate.

The gap that matters

A standard day in Geneva is not “a little meat and some vegetables.” It is bread, a sweet drink, a sauce built on seed oil, a yoghurt with sugar, and a dinner that is mostly starch with a slice of protein on top.

Swap that for eggs, butter, and a supermarket steak and three things move at once.

  • You stop the constant glucose hits.

  • You eat fat your body already knows how to use.

  • You stop snacking because the meal actually ends.

That is not a marketing claim. It is what people report in the first month, before they ever find a regenerative farm.

Ruminants are not a feed mirror

Beef is not pork, and pork is not chicken.

A ruminant takes plant fats, including a lot of unsaturated fat in ordinary feed, and turns most of them into saturated and monounsaturated fat in the meat. The rumen is a conversion vat. Grain-finished beef is not “salad oil with a hide.” The fatty-acid profile moves toward the animal, not toward the sack of feed.

That does not make feedlot beef equal to grass-finished beef. Omega-3, vitamin content, and how the land was treated still differ. It does mean the cheap steak is already on the right side of the ledger compared with crackers and sunflower oil.

Pork and chicken track the feed more closely. If the ration is high in linoleic acid, more of it shows up in the fat. Useful to know. Not a reason to refuse a pork chop when the alternative is a pastry.

Grass-finished is the upgrade, not the gate

Order of operations:

  1. Meat, eggs, and a cooking fat you tolerate. Any decent butcher or supermarket cut.

  2. Enough fat so you are not eating dry chicken breast and calling it a diet.

  3. Then the better animal, when the budget allows.

People who reverse this order often eat nothing closer to an animal than a protein bar “while they source properly.”

In Switzerland the practical ladder is simple. Aligro, a village butcher, then a farm box. The meal plan can follow the same ladder. A delivery service that only sells the top rung leaves the person who needs the exit ramp outside.

What “good enough” looks like this week

Breakfast you skip, or eggs in butter. Lunch: beef mince, salt, and the fat you poured off yesterday. Dinner: a roast chicken, skin on, or pork shoulder you started in the morning.

No rice. No “balanced” bun. Onions and garlic if you do well with them. Dairy if you do well with it. Leave it out if you do not.

Macros are not the point of the first fortnight. The point is one ingredient list you can read, and a meal that lasts until the next one.

The objection that wastes a year

“It has to be grass-finished or it does not count.”

It counts. The standard plate is the baseline, not the farm shop. A person who eats ordinary beef and eggs for ninety days has already left the system that sells them fortified flour and a statin conversation. The regenerative purchase can come after the habit exists.

Soil still matters. Rotational grazing still builds land that row crops mine. Buying the better animal, when you can, pays the person who is doing that work. It is the second decision. Not the first.

If you are starting

Pick one week. Same shops you already use. Beef, eggs, butter, or lamb if that is what is reduced. Cook it in its own fat. Notice hunger at 16:00 instead of arguing with a label.

The perfect carcass can wait until the ordinary one has done its job.
